Plasma levels of nitrite/nitrate may not accurately reflect endothelial nitric oxide synthase
(eNOS) function because of interference by dietary nitrates. Nitrosyl hemoglobin (HbNO), a
metabolic product of nitric oxide (NO•), may better correlate with bioavailable NO•, but it may
