Publisher Summary Carboxypeptidases are enzymes that remove amino acids one residue
at a time from the C-termini of polypeptide chains. Three types of enzyme are characterized
that differ in the rate at which they release particular amino acids. This chapter discusses the
enzymic hydrolysis with carboxypeptidases. Carboxypeptidases A (CPA) release most
