Four phases of discovery led to the general acceptance today that the stomach secretes
hydrochloric acid. The first step was the appreciation that gastric contents might be acid.
Secondly, there was a long argument whether this acid was secreted by the stomach or
whether it was produced by the fermentation of food. Thirdly, the nature of the acid had to be
determined qualitatively. In the fourth and final phase, gastric acidity was measured
quantitatively, allowing our current measurements of basal and maximal acid output.
