Publisher Summary This chapter describes the interaction of antifreeze glycopeptides and
peptides with ice and water. All antifreezes affect the morphology or habit of ice crystals both
at low and high concentrations. Crystal habit modification is observed with all glycopeptide
antifreezes and with three different peptide antifreezes from three different species, which
include the winter flounder, the shorthorn sculpin, and the sea raven. In the intact fish,
